Introduction:
Tunisian Grilled Fish with Chermoula is a classic dish that embodies the essence of Mediterranean cuisine. Chermoula is a flavorful marinade made with fresh herbs, spices, and olive oil, originating from North Africa. This marinade not only tenderizes the fish but also infuses it with aromatic flavors, making it a beloved recipe along the Tunisian coast.

Ingredients:
- 4 whole fish (sea bass or red snapper), cleaned and scaled
- 1 cup fresh cilantro, chopped
- 1 cup fresh parsley, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Juice of 1 lemon
- 1/2 cup ZWITA olive oil
- Salt and pepper to taste
- Lemon slices and extra herbs for garnish
Instructions:
- Prepare the Chermoula Marinade: In a bowl, combine cilantro, parsley, garlic, cumin, paprika, lemon juice, and Tunisian olive oil. Mix well to form a thick paste.
- Marinate the Fish: Make shallow cuts on both sides of each fish. Rub the chermoula marinade all over the fish, including the cuts and cavity. Let it marinate for at least 30 minutes.
- Grill the Fish: Preheat your grill to medium-high heat. Grill the fish for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily with a fork.
- Serve: Transfer the grilled fish to a serving platter. Garnish with lemon slices and fresh herbs. Serve hot
Tips:
If you don’t have access to a grill, you can bake the fish in a preheated oven at 400°F (200°C) for about 20 minutes.
