Tunisian Grilled Fish with Chermoula Marinade

Introduction:

Tunisian Grilled Fish with Chermoula is a classic dish that embodies the essence of Mediterranean cuisine. Chermoula is a flavorful marinade made with fresh herbs, spices, and olive oil, originating from North Africa. This marinade not only tenderizes the fish but also infuses it with aromatic flavors, making it a beloved recipe along the Tunisian coast.

Ingredients:

  • 4 whole fish (sea bass or red snapper), cleaned and scaled
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Juice of 1 lemon
  • 1/2 cup ZWITA olive oil
  • Salt and pepper to taste
  • Lemon slices and extra herbs for garnish

Instructions:

  1. Prepare the Chermoula Marinade: In a bowl, combine cilantro, parsley, garlic, cumin, paprika, lemon juice, and Tunisian olive oil. Mix well to form a thick paste.
  2. Marinate the Fish: Make shallow cuts on both sides of each fish. Rub the chermoula marinade all over the fish, including the cuts and cavity. Let it marinate for at least 30 minutes.
  3. Grill the Fish: Preheat your grill to medium-high heat. Grill the fish for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily with a fork.
  4. Serve: Transfer the grilled fish to a serving platter. Garnish with lemon slices and fresh herbs. Serve hot
Tips:

If you don’t have access to a grill, you can bake the fish in a preheated oven at 400°F (200°C) for about 20 minutes.
